High-Protein Green Beans Flat-Bread: A 7-Day Power Recipe

Ingredients & Soaking

To make this power-packed Flat-Bread, you'll first need whole green beans (mung beans) - I used half a cup. Wash them thoroughly 4–5 times with clean water, then soak them overnight so they double in size. By morning, they should be well-soaked and soft - soft enough to mash easily between your fingers.

You can also soak them for just 2–3 hours if you're short on time. If you're making the Flat-Bread in the morning, soak the beans the night before; if making it at night, soak them that morning.

Making the Batter

Once soaked, drain the water, rinse the beans again thoroughly, and drain once more. Add the beans to a blender jar (the kind used for milkshakes) or a mixer jar. Then add:

  • 2 whole green chilies (washed)
  • 3–4 garlic cloves (peeled and washed)
  • ½ inch piece of ginger
  • Half a medium onion, roughly sliced into 2–3 pieces

Add just enough water to help blend the mixture smoothly - don't add too much, or the dough will become too soft later. Blend everything together, keeping the water quantity minimal.

Preparing the Dough

Transfer the blended mixture into the bowl you'll use for kneading. Now add the spices:

  • ½ tsp crushed red chili flakes
  • ½ tsp turmeric powder
  • 1 tsp salt (adjust to taste - if you have blood pressure concerns, reduce accordingly)

Then add:

  • 2 small green chilies, finely chopped
  • 1 small onion, finely chopped (about 4–5 tablespoons)

You can also add other vegetables of your choice, like carrots, bell peppers, or tomatoes - whatever you prefer. Adjust the green chili quantity based on your spice preference; the amount used here was moderate, not too spicy.

Add:

  • A pinch (2–3 pinches) of ajwain (carom seeds), crushed lightly by hand
  • Fresh coriander leaves

Now add the flour - about 2 cups, added gradually as needed. Mix the flour into the blended beans mixture to form a dough, adding it little by little.

Tip: Keep the water content low when blending the beans - if you use too much water, you'll need more flour to compensate for the dough consistency.

Knead the dough until it's slightly firm - this helps the Flat-Bread hold together well without tearing. You'll likely need around 2 to 2.5 cups of flour total, though this can vary.

If the dough sticks to your hands, apply a little cooking oil to your hands and the dough instead of water (water will make the dough too soft). Knead for 2–3 minutes until smooth using the oil.

Let the dough rest for about 5 minutes.

Rolling and Shaping

Divide the dough into small balls. Clean your countertop or rolling surface, dust with a little dry flour, and place a dough ball on it. Flatten it slightly, then sprinkle a bit of kalonji (nigella seeds) and fresh coriander on top - this adds both flavor and a nice appearance. You can also add white sesame seeds for extra aroma and taste.

You can flatten the Flat-Bread using your hands or a rolling pin - hand-flattening works especially well here, as the dough doesn't stick and results in thin, even Flat-Breads.

Cooking the Flat-Bread

Heat a tawa (griddle) on medium flame. Once ready, place the shaped Flat-Bread onto it. Let it cook for about 2 minutes, or until the top surface looks cooked through, then flip it.

While one Flat-Bread cooks, prepare the next one the same way - flattening, adding coriander, kalonji, and optionally sesame seeds. Continue this process for all the Flat-Breads.

Once you see a nice color develop on the Flat-Bread, you can press it gently with a cloth or tongs to help it cook evenly, or lightly cook it directly on the flame if preferred.
